Chicken rolls wrapped in jamón serrano

Ingredients
- 600 grams of chicken breast
- 100 grams of coriander leaves
- 300 grams of Ricotta cheese
- 150 grams of Parmesan cheese (finely shredded)
- 1 egg
- 200 grams of jamón serrano
- salt and pepper to taste
Instructions
- Cook the chicken breast in boiling water for 12 minutes, take it out, and then wait for it to cool down.
- Shred the chicken together with the coriander leaves in a food processor.
- Take a large bowl, and mix the chicken, coriander, ricotta, parmesan, egg and salt.
- Keep mixing until you get a homogeneous paste.
- Retrieve the slices of jamón serrano, spread the paste along the length, and then roll them up.
- Bake in a pre-heated oven for 15 minutes at 180 degrees Celsius. When done, it is ready to serve.
